Product Description Madeleines, those little shell-shaped sponge cookies immortalized in film and literature, have become a must for traditional tea-times and small gatherings. However, to make perfect madeleines, the pan is as essential as the recipe. Since the cookies are very delicate, the pan has to be extremely slippery so the madeleines pop right out, while also being strong and durable to heat evenly without burning. The Chicago Metallic Madeleine Pan is constructed of heavy gauge steel for superior strength and even heat transfer with a durable nonstick coating for quick and easy release. The pan measures 15-1/2 by 7-1/2 inches and makes up to 12 madeleines at a time.

Excellent Baking Product May 4, 2008 Don Proctor (Central Maryland) 20 out of 20 found this review helpful
The first batch of cornbread cookies I made with the pan came out very well and look just like they do in the pictures. The pan is easy to clean and retains its new look. Even though it has a coated surface, I found a light dusting of spray cooking oil made the baking experience even smoother. There was absolutely no sticking, and the cookies came out perfectly. This is an excellent product. I definitely recommend it.
If you screw this one up--you shouldn't be allowed in the kitchen. November 28, 2008 Celeste Roche (The Constitution State) 18 out of 18 found this review helpful
I had a craving for some Madeleines. After comparing pans available on Amazon and searching feverishly in the house for something that might suffice... I bought this baby. I was a bit miffed about the price, knowing how much my mother paid for her old Madeleine pan. That's inflation for you, though. And I'll tell you something about Mom's pan--it didn't make perfectly smooth Maddies that SLIDE RIGHT OUT of the pan without so much as a poke.
If you're looking for a no-fuss way to fill people up with delicious Madeleines, this is the pan to get. It takes less than 15 minutes from the thought to the mouths. Great for hungry teenagers with exquisite tastes.
Make sure you spray the pan and all will me WELL! March 1, 2009 Carrie Bailey (Portland, OR) 12 out of 12 found this review helpful
I bought this and another Madeleine pan at Williams-Sonoma. I have to say that this pan works much better than the other pan I bought. I actually cut my hand severely on the other pan. The only thing I can recommend is that you butter or spray this pan to avoid the crumbled remains on your madeleines. This is the best pan that I've found.
Totally happy with this purchase. Pay a few dollars more and have better results!
Great for begginers! March 2, 2009 spring (New York) 3 out of 3 found this review helpful
To start off, I have never baked cookies before. I followed the recipe to a T. Once done, the cookies came out perfect and slid right out once I tipped the pan!
Just make sure to butter it plenty prior to putting the dough in the slots. I melted some butter in a small plate and used a clean finger to apply :) since I do not have one of those special brushes.
Everyone said the cookies were delicious. And there are plenty of recipes on Martha Stewart website to experiment! The cookies are about 3 inches in length, so just a right serving.
Great Pan May 8, 2009 redrosetmc 3 out of 3 found this review helpful
I ordered this pan to make madeleines. Never having made madeleines before I wasn't sure what type of pan to get. Googled it and found a variety of pans from really cheap to very expensive. This pan fell in the middle for price. After making a batch or two of madeleines, I can say this pan is great. It's easy to use and is quick to clean up. Yes, you need to grease/spray the shell areas so your madeleines don't stick. I found out the hard way but the pan cleaned up pretty good and didn't scratch up as I attempted to pull the madeleines out of the pan.
Overall, for the price and ease of cleaning, I think the Chicago Metallic madeleine pan was worth buying.
