So, What is Toddy Maker Coffee?

Toddy Maker coffee is produced by a simple device that uses cold water and a carefully designed filter system to produce an exceptionally pure coffee concentrate from ground coffee. The advantages of coffee brewed with the Toddy Maker make it a popular choice among both individuals and the food service industry.

Cold water brewing extracts the desirable flavor elements, but eliminates many of the undesirable oils and acids found in hot brewed coffee that are not soluble at low temperatures. Cold brewed coffee tastes smoother and is easier on the stomach. Toddy coffee has been recommended by doctors to their patients who are sensitive to the acid in hot brewed coffee.

The original Toddy Maker consists of a plastic brewing container with a plug and filter at the bottom. One pound of regular grind coffee and nine cups of cold water are added and allowed to steep for eight to twelve hours. The plug is then removed and the resulting concentrate is allowed to drain through the filter into a glass carafe which is also provided. The grounds are then disposed of (they make good compost) and the filter rinsed thoroughly. The concentrate must be refrigerated.

To make a cup of hot coffee mix one part concentrate with three parts water and heat in the microwave. To make iced coffee mix one part concentrate with three parts water and serve over ice. The concentrate is good for about three weeks in the refrigerator, and can be frozen for several months

Coffeemaker Features

A removable filter basket is the easiest for loading and removing the used filter. Baskets that sit inside a pullout drawer can be messy. Paper filters- usually “cupcake” or cone-shaped -absorb oil and keep sediment from creeping through. Models with a permanent mesh filter need to be cleaned after each use, but can save you money over time. Neither type of filter detracted from coffee flavor in our tests. The simplest type of water reservoir is one with a big flip-top lid and lines that mark the number of cups in large, clearly visible numbers that can viewed in low light. Some reservoirs are removable so you can fill up at the sink. Some are dishwasher safe. Transparent fill tubes with cup markings let you check the water level while pouring.

A thermal carafe helps retain flavor and aroma longer than a glass pot on a hotplate. Other niceties to look for: a small-batch, 1-4 cup setting, which adjusts the brew cycle to compensate for the relatively short heating and brewing times compared with a full pot (they claim to prevent too-weak or too-cool brew), hot-plate temperature and brew-strength controls, and a pause-and-serve feature that lets you pour a cup before the whole pot’s done. (A purist would say the flavor balance of the pot and the poured cup are compromised.) A programmable timer lets you add ground coffee and water the night before, so you can wake up to a freshly brewed pot in the morning. An auto shutoff feature turns off the heating element, compensating for human forgetfulness. Most models have a preprogrammed time; others let you set the time. If you’re pressed for space, you might appreciate a coffeemaker with controls on the side. That allows you to turn the machine sideways, making it less deep on the counter.

Full-sized coffeemakers can be full of features, but not all of them add much. Here are some features of dubious value.

There’s little need for a self-clean cycle. Sending a mix of water and white vinegar through the machine usually cleans it effectively. A special cycle just holds the cleaning solution longer. A water filter is supposed to eliminate off-tastes and odors. But you must replace it after a specified number of pots (about $5 per filter) to prevent bacteria buildup. If water quality is a worry, a whole-house or faucet filter might be a better choice than a coffeemaker filter.

A carafe prewarm setting heats the carafe before the coffee drips in. In theory, that helps keep coffee warmer longer. In practice, it doesn’t make much difference. Built-in bean grinders can be annoying to use and clean. Grounds tend to spill, and you might need to upend the machine to empty residues.


A separate burr-type coffee grinder will probably work better, and provide you more options on the size of the coffee grounds.

Great for first-time juicer January 14, 2008
This is my first juicer, and so far, I’m very happy with it. I only use it a couple of times a week, so it is not something I use daily. I’ve had it for about a month and for its purpose in our household, it works great. I did some preliminary research before purchasing it and can confirm the other positive reviews that it received from other consumers. The only slight drawback is the clean-up; it isn’t difficult, but it is a multi-step process. With practice, however, I think I will get more efficient and as long as you clean right after you juice, it is a cinch. Great product!

I had not used the Kitchen Aid Artisan before I purchased it, but had seen many cooks use it on TV. No other mixer I have used comes close to this one. It will mix up whipped cream in just a few minutes, other mixers I have used take 10 minutes or so. With the way the mixer head rotates, you don’t have to do anything except maybe scrape the bowl a few times. I made cookie dough with no problem, my old mixer would overheat on thick products like cookie dough and potatoes. I love this product, it makes mixing sooooo easy!

We bought a Breville Espresso machine and were unhappy with the results using our old Krups propeller grinder. After reading Whole Latte Love and other sites, we decided to look into getting a decent grinder. While the Breville espresso machine still doesn’t quite live up to Barista standards (we were 3 weeks in Italy last summer - and it’s just too hard for anything to compare), the grinder made a huge difference. The ground coffee is uniform and the perfect texture (for us, we use it only for expresso and at a setting just a bit past espresso, it is perfect). The timer function is a little funny for me, but if I set it at a bit past 20 seconds and run it twice,then I have exactly the amount I need to fill the two cup basket. Yes, the plastic parts are pretty light weight, but then they really don’t receive anything like a coffee house work-out at the house. And by most any standard, the resulting coffee ground is perfect and this a great deal compared with spending over $300 for anything comparable. Highly recommended.

I cant understand why coffee grinders seem to be overlooked as gift ideas. They may not make the most glamorous presents, but they always make an impact on the lives of those who use them. What could be better than a coffee grinder for Christmas? It fits snuggly into a decent-sized stocking, and just a few hours later, leaning back in your chair after dinner, you can be breathing in the aroma of freshly ground coffee as you sample your first cup. Grinders can be found at any major store or mall. Theres a grinder out there for you no matter whether you have 5 or 50 dollars to spend. I bought my present modest grinder about four years ago for 10 bucks. It has never let me down.

Giving a coffee grinder at Christmas, perhaps along with a carefully wrapped sample of premium beans, is the best gift I could imagine. Ive given grinders to nearly all my family members over the years. As Ive said, I come from a family of coffee drinkers, so its a bit of a no-brainer gift idea, but Ive also given coffee grinders to friends as a wedding gift, at housewarming parties and even a college graduation. Funnily enough, nobody has ever bought me one. I guess they assume its something I dont lack. My kitchen is more like my own café than a food production area, and my coffee grinder holds centre stage on the counter. Everyone finds out its there pretty quickly - and why.

Preface: Read this article to learn the importance of pasta and the way to cook it.

In its various forms, pasta has become a part of almost every country. Some say that Marco Polo brought the idea of pasta from China to Europe, but archaeological evidence has shown that it had been in both places long before then, so after doing a great deal of study, I found that nobody really knows for sure what culture pasta truly came from (if it was just one).

Many people think of pasta as regular egg noodles, spaghetti, macaroni, and lasagna, but once you start looking around, there are many more completely different varieties. In Asia alone, although some of their noodles are wheat-based, they use a great amount of rice noodles, but also some with a variety of other starches. These other starches include such things as potato flour, buckwheat flour, and mungbean starch, and may be eaten either hot or cold. Noodles in Asia are generally cooked by steaming, stir-frying, and even deep frying. They also have a large variety of different dumplings, which would also classify as pasta. Germans have their spaetzle, which is made with flour, eggs, water (or milk), and salt, made very soft and pushed through a colander into boiling water, then tossed with butter sauce, soups, and other dishes. In Poland they have their pierogi, half-moon shaped pork filled dumplings.

The most common Italian-style pasta refers to a dough made with semolina (durum wheat) flour mixed with water or milk and sometimes eggs. Semolina is the superior flour that is used because it doesn’t absorb too much water and is perfect when properly cooked al dente (just slightly firm). The most common source of pasta is dried, and when looking for the best brand of dried pasta, even Italians in Italy admit that Barilla is the best brand. When I was in Italy, some friends I made there were surprised that Barilla was popular here since it is so good.

It’s really not all that difficult to make fresh pasta either. All you need to buy is a pasta roller and the few basic ingredients. Generally, with fresh pasta, eggs are used as the liquid to better hold the more delicate pasta together. You can also experiment by adding other ingredients, such as adding herbs, sun-dried tomatoes, spinach, or even some sweeter ingredients for a dessert pasta. When you add extra ingredients, be careful with how much liquid you add to the pasta, as with many ingredients (such as spinach) you will need less liquid. Since the pasta is rolled out as small as it is, it’s best to puree the added ingredients rather than leaving them chunky. Contrary to dried pasta’s almost indefinite shelf life, fresh pasta is best only within a few days of making it unless you freeze it or dry it yourself. Your pasta roller should come with directions on how to roll out the pasta. You can cut the pasta into a variety of shapes and sizes, and even make fillings and form the pasta into raviolis, tortellini, or other common (and not so common) shapes.

When cooking pasta ALWAYS make sure the water is boiling heavily and that there is a much larger quantity of water than pasta, as if both of those conditions don’t exist, the pasta will release too much starch and become sticky. Also, make sure you salt the water. Although it was a slight exaggeration, one chef I worked under always informed us how (in a real deep accent) “ze water must taste like ze sea.” You should always salt your water (taste the water to make sure it’s the right consistency), as that adds greatly to the flavor of the pasta.

There is a large variety of pasta sauces you can use as well. For a lighter summer dish, you may want to use a simple broth, aglio e olio (garlic and hot olive oil) sauce, Checca (lightly toast some garlic in olive oil then add basil and tomatoes until warm, season) sauce, or maybe a pesto (an uncooked puree of basil, garlic, and parmesan, then adding olive oil to your preferred consistency - for pasta you can also finish it with cream) sauce. For not so light pasta dishes, you can use a carbonara (make a basic cream sauce starting it with cooking bacon until very crispy and finishing it with romano cheese) sauce, alfredo (basic cream sauce finished with parmesan) sauce, a variety of other cream sauces, bolognese (meat sauce) sauce, marinara (a cooked tomato sauce made with garlic, onions, and herbs) sauce, other tomato-based sauces, and many more.

You can combine in the sauce and/or garnish pasta with a variety of ingredients. The most common meats include Italian sausage, chicken, seafood, ham, duck confit, anchovies, and beef. Other common ingredients include parmesan (or other) cheese, grilled or roasted vegetables (large dice various vegetables, toss them in oil, garlic, salt & pepper, and roast them quickly to golden brown in a VERY hot oven), roasted pepper strips, mushrooms, and a variety of herbs.

Pasta is such a versatile ingredient that it has an almost endless amount of variations that can be used in some sense in almost any theme of a meal or restaurant.

This percolator makes the best tasting coffee we’ve ever had.
We’ve been through many pots including professional makers designed for hotels and although an old fashioned stove top pot makes good coffee, it takes too long and it’s not as wonderful as what comes out of this maker. we use it everyday at least once or twice, and it’s held up for quite awhile. There is one snafu, you MUST load the basket very carefully, because if you don’t grounds find their way into the center tube and wind up in the brew. My husband is always getting grounds in the coffee, but it still tastes fabulous! I’ve had to replace the lid, that’s been my only complaint. The knob is plastic, but after roughly 1500 pots of coffee, I can’t gripe too loudly, because the pot has outlasted every other pot we’ve ever owned! …Not to mention that if you truly love REAL coffee (not the drip crapola) this is the only pot there is!
