Pecan-crusted Catfish with Spicy Mango Chutney

Ingredients:
1 1/2 cups panko (Japanese) bread crumbs
3/4 cup shelled pecans
4 U.S. Farm-Raised Catfish fillets (6 to 8 ounces each)
2 eggs, lightly beated with 2 tablespoons water
Vegetable oil for frying

Directions: In a food processor bowl, combine panko and pecans; process just until pecans are coarsely chopped. Lightly coat fillets with egg mixture, shaking off excess. Evenly coat each fillet with the panko mixture, firmly pressing to make it adhere. In a deep skillet, pour in oil to depth of 1 1/2 inches; heat oil to 350 degrees F. Fry fillets until golden on both sides, 6 to 8 minutes. Remove and drain on a rack. Serve with Spicy Mango Chutney.

* Spicy Mango Chutney

Ingredients:
1 small mango (cut in small dice-shaped pieces)
2 tablespoons finely chopped jalapeño
1 tablespoon chopped cilantro

1 tablespoon apricot preserves
2 tablespoons lime juice
Salt and pepper to taste

Directions: In a microwave-safe bowl, combine mango, jalapeño, cilantro, red bell pepper, apricot preserves and lime juice. Cover loosely; microwave for 1 minute; stir and microwave until mango is barely tender. Season with salt and ground black pepper to taste. Serve warm or chilled.

Grilling really can’t get much easier than this. After assembling the grill (which takes only a few minutes), simply plug it in and allow about 10 minutes to fully preheat the surface while you gather your steaks, kebabs, or whatever’s to be grilled. The electric heat has an adjustable range from low (for keeping food warm) to high (for searing steaks). The nonstick grill surface not only means you can use a minimum of added fat, but it also makes cleanup a cinch. The surface has a subtle slope, with channels that draw accumulated fat or other liquids into a tray just below the surface. The high domed and vented lid helps create a circular flow of hot air to ensure even cooking–particularly important for a large roast or whole chicken.

The grill can be placed either directly on a tabletop or atop its pedestal. On its own, the grill surface stands about 6 inches high; with the pedestal, it stands about 2-1/2 feet high, not counting the domed lid. The pedestal is plenty sturdy for cooking, but the grill still seems a bit top-heavy, so pay special attention if grilling in a high-traffic area or near kids. Go Indoors Or Outdoors With A George Foreman Grill

Do you know anyone who views barbeque grilling as one of their passions in life? You know the types I’m talking about, someone who buys a new grill each year with all the bells and whistles. I am actually almost one of those guys. While I don’t buy a brand new state of the art grill each year, I do own a George Foreman indoor outdoor grill.

There are a couple things I like about this Foreman grill. For starters, it is very simple to use and easy to move around. It’s very light and can be quickly converted for both indoor and outdoor use depending on the circumstances. When the weather is bad, just move it inside for your cooking. When outdoors it sits on a pedestal, but the grill can be taken off that and placed on a tabletop for convenience. And like other George Foreman grills it is electric so there is no mess to clean up when you are done.

Another plus in my book is the fact that it has a grate that slopes away from the food, to allow the fat to flow into a tray. This is standard on other Foremans as well and one reason they are so popular today. And the grill top itself is large enough for most meals, handling several steaks or hamburgers with ease. The first time I saw one I knew I had to try one out, and I’m glad I did.

One thing I’ll never do is replace my standard ‘old school’ charcoal grill with a Foreman. You just can’t beat the barbeque flavor that you get when using charcoal. I’ve come to know and love the flavor of the meat when I use it. However, my George Foreman indoor outdoor grill is a perfect complement to it. When I need to quickly grill something up, or if it is raining or snowing outside I’ll pull the Foreman out with confidence. I know it will perform just as I need it and my barbecue meal will be fine for me and my family.

It’s obvious that for ease of use, convenience, and bang for the buck it’s hard to beat an indoor outdoor grill from George Foreman. When they came out with this line of grills, the designers really thought about what it is people want when the cook meat. By thinking more like the average griller they were able to solve a common problem in a great way. These grills are revolutionary in their industry.

Indoor Contact Grills

George Foreman Grills (Salton) dominate the indoor grill market with something like a reputed 80% market share. With dozens of models in attractive designer colors George Foreman Grills are not likely to give up their #1 position anytime soon.

Most George Foreman grill models have lids with heating elements. This design is called a contact grill because the food is heated simultaneously on the top and bottom. This is logically enough the fastest indoor grilling method, and will cook a burger in 3 to 6 minutes. The main limitation is that the lid will not fit properly over food more than 1″ thick.

Open grills like the Sanyo Electric Indoor Barbeque Grill cook on one side at a time. The advantage of the open grill is that there is no limit to food thickness. 2″ steaks are good to go. Open grills provide better searing and grill marks than contact grills. Burgers will take 10 to 20 minutes on an open grill.

Contact and open grills do not heat much above 400 degrees. Your oven broiler probably gets to over 600 degrees and will produce much crispier results than either.

One other alternative is the Cast Iron Stove Top Griddle which is less convenient but can produce higher heat when placed directly on top of a gas or electric heating element. The ribbed structure produces nice searing marks on steaks and burgers.
