It goes with out saying that sushi is the most famous Japanese dish in the world. You can buy sushi in just about any corner of the world. There are many types of sushi, from the traditional nigiri zushi, sliced raw fish on sweet vinegar rice to California sushi roll.

The toppings along with the flavor of the sushi change from place to place but but they are start from the basic ingredients of sweet rice and raw fish. You would think that making sushi would be difficult but it is quite simple. Many Japanese people often make it at home because going to sushi bars can be expensive.

First making the rice. The rice can be any kind of white rice, but better the rice better the taste. It is said that if you make rice it tastes better if you make at least 2 cups of rice. So, We are going to make 2 cups of rice, but to make make 10 to 12 pieces of traditional sushi you need about 1 cup of rice, about 2 servings. You can put the remaining rice in a resealable container and freeze it for later.

To make the rice you will need 2 cups of rice and 2 cups of water. Wash the rice by hand in a large sauce pan. Wash and repeat at least 3 times. After you wash the rice let it stand in water for 30 minutes. When the thirty minutes are up, pour two cups of water in a small sauce pan and cover with a lid. Bring the water to a boil and then turn the temperature down to a small flame and add the rice. Cover with a lid and let the rice cook for 10 minutes and turn off the heat. Leave the sauce pan covered and let it sit for 30 minutes.

Now for the sushi rice. In Japan and many Asian food stores you can buy a powder called “sushi no ko” or the liquid called “Sushizu.” If you dont have access to either of these products you can make your own Sushizu. For now we are going to say that you dont have access to either of these products, and we are going to make our own.

Sushizu is pretty easy to make. The ingredients are, 15g sugar, 5g salt, 2 table spoons of vinegar. Put all ingredients in a small sauce pan and heat until the sugar melts and it is all liquid. This is good for 1 1/2 cups of rice. Mix rice and your sushizu and keep the rice warm. When the rice cools it will stiffen a little.

After you have made the sushi rice mix the rest is simple. Take your raw fish and slice it (I like thin) about 1 inch wide and 3 inches long. Next shape your rice. This is done by putting rice in the palm of one hand and pressing it with 2 fingers of the other hand. It takes some practice, but once you get the hang of it it is a breeze. After you shape the rice put your sliced sushi on top. Gently press it and place it on a serving plate. If you are eating is soon, cover and place it in the refrigerator.

Eat with soy sauce. Most Japanese people like Wasabi (the green spicy radish paste) on their sushi. If you get a chance give it a try. Enjoy your sushi!

3 Ways to Cook The Perfect Rice

Rice may be cooked by 3 methods, each of which requires a different proportion of water. These methods are boiling, which requires 12 times as much water as rice; the Japanese method, which requires 5 times as much; and steaming, which requires 2-1/2 times as much. Whichever of these methods is used, however, it should be remembered that the rice grains, when properly cooked, must be whole and distinct. To give them this form and prevent the rice from having a pasty appearance, this cereal should not be stirred too much in cooking nor should it be cooked too long.

BOILED RICE - Boiling is about the simplest way. Properly boiled rice not only forms a valuable dish itself, but is an excellent foundation for other dishes that may be served at any meal. The water in which rice is boiled should not be wasted, as it contains much nutritive material. This water may be utilized in the preparation of soups or sauces, or it may even be used to supply the liquid required in the making of yeast bread.


BOILED RICE (Sufficient to Serve Eight)
1 c. rice ; 3 tsp. Salt; 3 qt. boiling water

Wash the rice carefully and add it to the boiling salted water. Boil rapidly until the water begins to appear milky because of the starch coming out of the rice into the water or until a grain can be easily crushed between the fingers. Drain the cooked rice through a colander, and then pour cold water over the rice in the colander, so as to wash out the loose starch and leave each grain distinct. Reheat the rice by shaking it over the fire, and serve hot with butter, gravy, or cream or milk and sugar.

JAPANESE METHOD - Rice prepared by the Japanese method may be used in the same ways as boiled rice. However, unless some use is to be made of the liquid from boiled rice, the Japanese method has the advantage of being a more economical way of cooking this cereal.


JAPANESE METHOD (Sufficient to Serve Eight)
1 c. rice ; 1-1/2 tsp. Salt; 5 c. boiling water

Wash the rice, add it to the boiling salted water, and boil slowly for 15 minutes. Then cover the utensil in which the rice is cooking and place it in the oven for 15 minutes more, in order to evaporate the water more completely and make the grains soft without being mushy. Serve in the same way as boiled rice.

STEAMED RICE - To steam rice requires more time than either of the preceding cooking methods, but it causes no loss of food material. Then, too, unless the rice is stirred too much while it is steaming, it will have a better appearance than rice cooked by the other methods. As in the case of boiled rice, steamed rice may be used as the foundation for a variety of dishes and may be served in any meal.

STEAMED RICE (Sufficient to Serve Six)
1 c. rice; 1-1/2 tsp. Salt 2-1/2 c. water

Wash the rice carefully and add it to the boiling salted water. Cook it for 5 minutes and then place it in a double boiler and allow it to cook until it is soft. Keep the cooking utensil covered and do not stir the rice. About 1 hour will be required to cook rice in this way. Serve in the same way as boiled rice.

In its various forms, pasta has become a part of almost every country. Some say that Marco Polo brought the idea of pasta from China to Europe, but archaeological evidence has shown that it had been in both places long before then, so after doing a great deal of study, I found that nobody really knows for sure what culture pasta truly came from (if it was just one).

Many people think of pasta as regular egg noodles, spaghetti, macaroni, and lasagna, but once you start looking around, there are many more completely different varieties. In Asia alone, although some of their noodles are wheat-based, they use a great amount of rice noodles, but also some with a variety of other starches. These other starches include such things as potato flour, buckwheat flour, and mungbean starch, and may be eaten either hot or cold. Noodles in Asia are generally cooked by steaming, stir-frying, and even deep frying. They also have a large variety of different dumplings, which would also classify as pasta. Germans have their spaetzle, which is made with flour, eggs, water (or milk), and salt, made very soft and pushed through a colander into boiling water, then tossed with butter sauce, soups, and other dishes. In Poland they have their pierogi, half-moon shaped pork filled dumplings.

The most common Italian-style pasta refers to a dough made with semolina (durum wheat) flour mixed with water or milk and sometimes eggs. Semolina is the superior flour that is used because it doesn’t absorb too much water and is perfect when properly cooked al dente (just slightly firm). The most common source of pasta is dried, and when looking for the best brand of dried pasta, even Italians in Italy admit that Barilla is the best brand. When I was in Italy, some friends I made there were surprised that Barilla was popular here since it is so good.

It’s really not all that difficult to make fresh pasta either. All you need to buy is a pasta roller and the few basic ingredients. Generally, with fresh pasta, eggs are used as the liquid to better hold the more delicate pasta together. You can also experiment by adding other ingredients, such as adding herbs, sun-dried tomatoes, spinach, or even some sweeter ingredients for a dessert pasta. When you add extra ingredients, be careful with how much liquid you add to the pasta, as with many ingredients (such as spinach) you will need less liquid. Since the pasta is rolled out as small as it is, it’s best to puree the added ingredients rather than leaving them chunky. Contrary to dried pasta’s almost indefinite shelf life, fresh pasta is best only within a few days of making it unless you freeze it or dry it yourself. Your pasta roller should come with directions on how to roll out the pasta. You can cut the pasta into a variety of shapes and sizes, and even make fillings and form the pasta into raviolis, tortellini, or other common (and not so common) shapes.

When cooking pasta ALWAYS make sure the water is boiling heavily and that there is a much larger quantity of water than pasta, as if both of those conditions don’t exist, the pasta will release too much starch and become sticky. Also, make sure you salt the water. Although it was a slight exaggeration, one chef I worked under always informed us how (in a real deep accent) “ze water must taste like ze sea.” You should always salt your water (taste the water to make sure it’s the right consistency), as that adds greatly to the flavor of the pasta.

There is a large variety of pasta sauces you can use as well. For a lighter summer dish, you may want to use a simple broth, aglio e olio (garlic and hot olive oil) sauce, Checca (lightly toast some garlic in olive oil then add basil and tomatoes until warm, season) sauce, or maybe a pesto (an uncooked puree of basil, garlic, and parmesan, then adding olive oil to your preferred consistency - for pasta you can also finish it with cream) sauce. For not so light pasta dishes, you can use a carbonara (make a basic cream sauce starting it with cooking bacon until very crispy and finishing it with romano cheese) sauce, alfredo (basic cream sauce finished with parmesan) sauce, a variety of other cream sauces, bolognese (meat sauce) sauce, marinara (a cooked tomato sauce made with garlic, onions, and herbs) sauce, other tomato-based sauces, and many more.

You can combine in the sauce and/or garnish pasta with a variety of ingredients. The most common meats include Italian sausage, chicken, seafood, ham, duck confit, anchovies, and beef. Other common ingredients include parmesan (or other) cheese, grilled or roasted vegetables (large dice various vegetables, toss them in oil, garlic, salt & pepper, and roast them quickly to golden brown in a VERY hot oven), roasted pepper strips, mushrooms, and a variety of herbs.

Pasta is such a versatile ingredient that it has an almost endless amount of variations that can be used in some sense in almost any theme of a meal or restaurant.

This percolator makes the best tasting coffee we’ve ever had.
We’ve been through many pots including professional makers designed for hotels and although an old fashioned stove top pot makes good coffee, it takes too long and it’s not as wonderful as what comes out of this maker. we use it everyday at least once or twice, and it’s held up for quite awhile. There is one snafu, you MUST load the basket very carefully, because if you don’t grounds find their way into the center tube and wind up in the brew. My husband is always getting grounds in the coffee, but it still tastes fabulous! I’ve had to replace the lid, that’s been my only complaint. The knob is plastic, but after roughly 1500 pots of coffee, I can’t gripe too loudly, because the pot has outlasted every other pot we’ve ever owned! …Not to mention that if you truly love REAL coffee (not the drip crapola) this is the only pot there is!

Do Not Use That Kitchen Knife Until You Know How To Care For It

When using a kitchen knife, or any sharp object, remember to put safety first. Although it sounds obvious don’t run around with a sharp knife in your hand, don’t point a knife at anyone and always cut away from yourself not towards yourself. Also, don’t use your finger to see how sharp the blade is. Yes, I know some of you reading this article have been guilty of this at least once and have found out that the edge of the knife was indeed very sharp because you cut yourself on it!

Another important safety tip is to never use the knife for other than its intended purpose. No, a sharp kitchen knife should not be used as a makeshift screwdriver or as a device to try and pry open a locked door that you cant find the key for. Nor should it be used to pry apart a stack of frozen hamburger patties. You could easily cut yourself if the knife slips and you are also in danger of breaking the tip of your knife off. Also, don’t use your kitchen knives to cut the tops off plastic jugs or to cut cardboard boxes unless you want to almost instantly dull your knife. Use a scissors or utility knife for those jobs.

When you buy a kitchen knife you get what you pay for so invest in the best quality knives you can afford and buy them from a reputable dealer. A fully forged carbon knife is the highest quality knife you can buy. High carbon stainless steel knives are also pretty good. Regular stainless steel knives aren’t as good and wont last you as long but any knife will last longer if you take care of it properly (and most people don’t care for their knives the way they should). What should you do to properly maintain your knives? Below is a list of 6 important knife care tips.

1) Never ever, and I repeat NEVER, put your knives in the dishwasher. The harsh chemicals from your dishwasher detergent will pit your knives and the dry cycle will also damage your knives. In addition, if the sharp edges of your knives bump up against anything else, like your plates, it will damage and dull your knives. Instead, as soon as possible after using your knives, wash them by hand with a mild detergent and hand dry them. Don’t allow the knives to drip dry because moisture will dull your knives and will damage the wood handles of knives.

2) Always use a cutting board. Don’t cut on your countertop. Not only is cutting on your countertop bad for your countertop, its bad for the blade of your knife too. And never use a glass cutting board. Glass cutting boards may be pretty but they are also pretty horrible for a knife. Its a quick way to dull and ruin a knife.

3) Regularly use a honing steel to maintain the edges on your knives, but learn how to use the honing steel properly. To learn the right technique, ask the dealer where you buy your knives to sell you a good honing steel and to also show you how to use it.

4) Have your knives professionally sharpened. Although there are lots of knife sharpeners available for in-home use, I don’t recommend using them. Its too easy to permanently damage your knife. Instead use your honing steel regularly and take your knives to a professional for sharpening a few times a year. If you take care of your knives properly you wont need to get your knives sharpened more than a few times a year depending on how much you use your knives.

5) Don’t store your knives in a drawer with lots of metal objects, such as your kitchen utensil drawer. The edges of your knives will get banged against the other metal things, damaging and dulling the edges of your knives. You can still store your knives in a drawer, but don’t have that drawer crowded full of other items. Just keep your knives in that drawer. Another option is to use a wood block to store your knives.

6) Use the correct knife for the task at hand. Don’t use your serrated bread knife for chopping and dicing. Don’t use your boning knife to slice your bread. Instead, use a chefs knife (also called a cooks knife or a French knife for chopping, slicing and dicing. Use a paring knife for peeling and trimming, and for cutting and slicing small items. A utility knife is great for slicing meat and cheese. A boning knife is for cutting meat and poultry. A fillet knife is a great for cutting fish. And, as you would expect, a bread knifes best use is cutting bread.

With proper use and care, your knives will last you a long time and will help make your kitchen cutting tasks easier and more enjoyable.
