CHARCOAL GRILLS

Steaks burgers, ribs, and chicken taste better cooked on a charcoal grill. That's my story and I'm sticking to it! Plus, there's a primal (male) satisfaction in mastering how to use a charcoal grill that cannot be overcome by the convenience of gas or even a gas and charcoal combo grill. The best charcoal grill is rock solid and rugged with enough cooking surface to feed the entire team. Small charcoal grills are portable and good for BBQ anywhere.

GAS GRILLS

Gas grills are initially more expensive than charcoal grills but are more convenient and propane cost less to operate. Two burners are better than one at avoiding hot and cold spots on the cooking surface. The best cooking grates are cast iron, stainless steel or porcelain-coated aluminum. Most manufacturers use lava rock or ceramic briquettes to distribute the heat. Solaire infrared grills use intense direct heat to cook the food in half the time. That's how those expensive steakhouses do it too.

KITCHEN STORAGE

Where can I store it? You can never be rich enough, thin enough, or have enough kitchen storage. Cabinets, canisters, containers, racks, shelving and systems placed in corners, under cabinets or banished to the kitchen island are but a few of the ways that human genius has tackled the never-ending, age old kitchen storage problem.

COFFEEMAKERS

Two coffeemakers may be more economical than one. Standard 10-12 cup coffeemakers are not very good at brewing small 1 and 2 cup batches, so for good taste you tend to make more coffee than will be consumed within the 20 minute "fresh-brew" window. You can extend the fresh-brew window up to 60 minutes with a thermal carafe but in the long run you throw away more coffee than you drink. Single serve coffee makers use coffee pods and are just so much better at that morning cup or two. Mr. Coffee and Black & Decker are the major domestic coffeemaker manufacturers with Bunn and Krups leading the imports.

SMALL KITCHEN APPLIANCES

Can a blender chop? If you spend anytime in the kitchen you invariably hit the recipe that requires a very specific kind of preparation. Trying it with a make-do substitute or a woefully underpowered appliance never seems to work. What do you use to replace an immersion blender? The good news is that prices are reasonable while the quality of small kitchen appliances, among certain manufacturers, at least, is very high and designs are more colorful and user friendly.

COOKWARE

Cookware sets are more economical than buying individual pieces — but only if you use every piece in the set. The essential cookware set for your kitchen should probably be:
  • 8" skillet for bacon and eggs or a couple burgers
  • 9" skillet for stir-fry, several burgers, chicken breasts or chops
  • 12" skillet with deep sides for one-dish meals like casseroles and for when the 9" will not do
  • 8" stockpot for pasta, homemade soup and sauces
  • 3 qt. saucepan for heating soup, cooking rice and steaming vegetables
  • 4 - 6 qt. Dutch oven for stews and pot roasts
